Molise's food is very similair with Abruzzi. Molise also shares some culinary traditions with Campania and Apulia. Their food is a mixture of northern and southern Italian traditions along with some of its own. Near and around the mountains the main meat is lamb, kid, mutton and ewe. These meats are the basis for many of the dishes they serve like: Cacio e Uova, which is cooked in earthenware pot and served with egg and cheese. Pork and Salami are also very popular in Molise.
The popular cheeses in Molise consist of Pecorino, Caciocavallo and Scamorza. Pasta is the main dish and is served with tomato Ragu of lamb or pork and a good amount of Molise's diavolino red peppers. Molise's olive oil is one of the best and has been famous since Roman times, but Molise's oil is not made in large amounts for exporting. Some of the seafood served in Molise is fresh anchovies, swordfish, mussels and clams. The deserts Molise is famous for is Panettoncino di Mais, which is a chocolate cake made with corn flower. A holiday treat they serve during Christmas is Calciuni del Molise which is Ravioli filled with a chestnut filling and served at Christmas.
